The principle of the freezing tunnel is based on a circulation of air at a very high speed and at a temperature of the order of -35℃. It will allow a rapid lowering of the temperature of the product to stabilize it around -18℃/-20℃ at heart.

The freezing speed of a tunnel is essential to maintain the quality of the food. The process itself freezes most of the nutrients and vitamins of foods. With this method of freezing the formation of ice crystals of tiny sizes will not deteriorate the tissues of the product. With a slight exudation at the time of thawing, the foodstuffs will retain all their taste qualities.

Remember that this process would be quite degraded, during a slow freezing type cold storage negative food preservation (-18℃/ -20℃). The formation of larger crystals would damage the cell wall by altering the product that will lose water at the time of thawing.
